One of the oldest mechanics in Minecraft is getting a major change in the Caves and Cliffs Update. Blocks won’t drop anymore when you mine Iron and Copper veins. Instead, raw ore will plop onto your ground!
This is an important change that makes sense. Minecraft 1.17 will introduce a new block called Deepslate. This block is deep underground and, like stone, will have veins containing iron, gold, and copper. In their wisdom, developers decided that the majority of players would not like to have Stone Iron Ore or Deepslate Iron Ore blocs.
They decided to drop the raw ore from both the Stone and Deepslate veins in order to avoid a clutter inventory. Even better is the fact that these raw mineral ore will be affected with the Fortune enchantment.

This means, that mining any variety of Iron, Copper, and Gold ores with a Pickaxe enchanted by Fortune will increase your ability to get more resources.
There are some things that will not change, however. Raw ores, appropriately titled Raw Gold and Raw Copper, will still have to be melted into their respective bars. The Pickaxe can also be enchanted using Silk Touch to change the veins’ drop rate to either Iron Ore, or Deepslate Iron Ore. This means that the blocks will still be available, but they won’t come from normal mining.
